In response to requests we've gotten, here is the strawberry risotto recipe that was presented as part of our Valentine's Recipes Zoom Program:

2 cups carnaroli or arborio rice 2 tblsps extra virgin olive oil 1 slice golden onion chopped o 4 leeks chopped 12 ounces fresh strawberries- cut into small pieces 8 ounces dry white wine or champagne or prosecco 4 cups hot broth- chicken or vegetable 4 tblsps parmigiana reggiano grated 1 tblsp butter (optional) Place olive oil in saute pan, place in chopped onion or leeks saute till golden Add in rice and let toast for 3 minutes. Add in champagne, stir till all liquid is absorbed, Place in 1/2 cup broth, stir till all liquid is absorbed and repeat this for approx 18 minutes or until desired consistency. At last 5 minutes place in strawberries. Top with butter, stir till melted, remove from heat. Serve with grated parmigiana reggiano cheese and drizzle of olive oil.
